ISOSWEET® 180 High Fructose Corn Syrup is a high solids version of ISOSWEET® 100, produced by increasing the dry substance content of ISOSWEET® 100 from 71% to 80%. ISOSWEET® 180 High Fructose Corn Syrup is intensely sweet, has good color and clarity, and is relatively low in viscosity. It is processed to meet the highest of food standards in terms of color, clarity, and ash. ISOSWEET® 180 High Fructose Corn Syrup is designed to meet processing requirements for an extremely sweet, high solids syrup, especially when cooking or evaporation stages are integral to the process.

  • ISOSWEET 180 is designed to meet processing requirements for an extremely sweet, high solids syrup, especially when cooking or evaporation stages are integral to the process. When working in liquid systems with foods that are naturally high in moisture, e.g., pickles, applesauce, etc., ISOSWEET 180 provides adequate sweetness without adding additional water.
  • For preparing jams, jellies, and preserves, the high solids contribution of ISOSWEET 180 reduces the amount of water that must be removed during evaporation. Processing times are therefore shortened and energy demands reduced, while fruit color and pulp integrity are maintained.
  • In applications in which the dextrose content is critical, ISOSWEET 180 can frequently be combined with a high maltose corn syrup to "control" the final sugar configuration of the product. This may be done to eliminate crystallization or "graininess" in high solids foods.

At the recommended storage temperature of 105-115°F, ISOSWEET 180 can be stored and handled in most conventionally constructed corn syrup or liquid sugar systems. Within this range, color development is minimized and crystallization is prevented. Where conditions warrant, heat tracing and insulation should be used to maintain these temperatures. Tanks and piping may be fabricated of stainless steel, mild steel coated with a non-reactive material, or aluminum. Unalloyed steel and cast iron are suitable for accessory valves, meters, and fittings.
