STALEYDEX® 130 Liquid Dextrose

1 of 3 products in this brand
STALEYDEX® 130 Liquid Dextrose is valued for its complete fermentability, the ease with which it may be handled, and for its clean, balanced sweetness. In food applications it may be blended with corn or sucrose syrups, or used alone as the sole sweetener in baked goods, STALEYDEX® 130 is a clear, colorless liquid of high purity produced from pure crystalline dextrose, made under a patented Primient process. Unique manufacturing conditions involving enzyme conversion, carbon decolorization, resin refining, and “controlled crystallization” ensure its blandness, clarity, and low ash content. Special processing also eliminates unwanted trace minerals and elements that, if present, could adversely affect fermentation reactions and shelf life.

Application Information

STALEYDEX 130 is valued for its complete fermentability, the ease with which it may be handled, and for its clean, balanced sweetness. In food applications it may be blended with corn or sucrose syrups, or used alone as the sole sweetener in baked goods, confections, and in processed foods.

Because of its low cost, and rapid, total fermentability, STALEYDEX 130 is especially well suited for making breads and other fermented dough goods. In brewing it is an excellent adjunct for producing alcohol and natural carbonation.

The pharmaceutical industry utilizes liquid dextrose in a number of preparations, including antibiotics. It is also employed as the starting material for chemicals such as sorbitol, gluconic acid and the gluconates.

Handling

STALEYDEX 130 should be stored and handled within the temperature range of 130 to 145°F. To maintain its clear, non-crystalline character while in storage, its temperature should not be allowed to drop below 130°F.

Because of its low viscosity, STALEYDEX 130 is easily handled in most liquid sweetener systems, but the entire system must be heat traced to ensure trouble-free operation.
